Milch, Mehl, Salz und Zucker gut verrühren und Dotter unterrühren. Eiklar zu Schnee schlagen und unter die Milch- Dotter masse heben. Zum Schluss die Rosinen dazugeben. Butterschmalz erhitzen und den Teig in 2 Portionen backen. Nach dem Wenden mit der Gabel grob zerreißen. Staubzucker mit Vanillezucker und Zimt Mischen und angerichteten Schmarren damit besieben.
